Not really, it's not a "classic" supply and demand curve on either side.
For quite a lot of things, those with (as you call it, "elastic" cupply and demand) the demand curve is almost a line going from upper left to lower right, and the supply curve is almost a line going from lower left to upper right, with the point where they intersect determining price and volume. For PLEX however, there's two separate demand sub-shapes which add up (one for those that need PLEX to actually use, the other for those that want to keep PLEX as an asset for later use or sale) and two separate supply sub-shapes which add up (those that want to get ISK and have RL cash, and those that have PLEX stockpiles) - and neither one of those is quite similar to the classic elastic curves, let alone after compounding them. To make matters even worse, one of each subset changes in time according to perception of the most likely future. And for another one of them, shape is bound to how easy or hard it is to make ISK in-game at that particular time.
In conclusion, no, excess of PLEX created compared to PLEX actually used up doesn't need to (and hasn't) lead to a noticeable drop in price.
Plex created has always been in advance of plex consumed, sometimes by as mutch as 40% if my statistical modle is correct.(average is around 11.5%)
some of the sur-plex invariably ends up on the accounts of people who are "just taking a short break" that becomes perpetual.
that said I am still suprised at the people who are quite convinced that EVE has not become a F2P premium game
maybee I should start calling it a F2PPlexium game. maybee then the morons in the audience will get it through there heads that they lost that fight years ago.
